LOW-CARB DIETS

Fad diets come and go, but a group that continues to gain popularity is low-carb diets. Is a low-carb diet adequately nutritious? The answer comes from the University of Vermont Department of Nutrition and Food Sciences and the journal Frontiers in Nutrition. Researchers assessed three diets, with daily carb limits of twenty, forty and one hundred grams. All three exceeded nutrient needs for vitamins, folate, thiamin, niacin and riboflavin. Only people with special nutritional needs, such as additional folate for younger women, would need to adjust their diets. Authors add that the idea a low-carb diet must be also low in fiber is not supported by the study, in fact, higher fiber foods are actually an important part of a low-carb diet.
