When beef is consumed as part of a healthy diet, it helps fill essential nutritional gaps and does not adversely affect risk factors for type 2 diabetes—specifically, that beef as part of a healthy diet does not adversely affect blood sugar regulation. Indiana University School of Public Health researchers demonstrated that eating six to seven ounces of beef a day also caused no adverse effects to heart function when compared to a diet of poultry. This is encouraging news for more than one hundred thirty-five million Americans living with or at risk of type 2 diabetes. It is fair to note that the study, appearing in the journal Current Developments in Nutrition, was funded by the National Cattlemen’s Beef Association, but that organization was not involved in the study.
