Previous studies have hinted at an association between potatoes and type 2 diabetes. A new study in the British Medical Journal found the way potatoes are prepared determines whether they contribute to diabetes. Specifically, three servings per week of French fries is associated with a twenty percent excess risk of developing type 2 diabetes, but no significant association if potatoes were baked, boiled or mashed. If you are looking to lower your risk of diabetes, the researchers at Harvard’s Chan School of Public Health found swapping any form of potatoes for whole grains could actually lower risk of diabetes. They say small changes in our diet can have important impact on risk of developing type 2 diabetes.
